This is where I'd take them:

You might want to do a recon mission to ensure it meets your definition of "easy". The Heather Trail in Manning Park would be good too, if you're planning to go after the snow melts.

Juan De Fuca is an excellent choice, especially with a group like that as there are multiple bail-out points should health, mood, weather or other unexpected needs arise.
As per MOW, Manning is great, Heather trail, possibly starting up Grainger Creek to Nicomen lake, then on to Kicking Horse Camp, then a short day out to Blackwall. Two cars are needed. Skyline in Manning is equally rewarding, but that is an out-and-back. Day one to Mowich Camp, day two a dayhike to Hozameen and back, the return on day three. Manning is still under snow I would expect, melting fast now.
Good old Garibaldi is an excellent beginner destination, of course, but snowed in for a while yet, Manning probably clears first.
When were you thinking of going?

I'll second the Juan de Fuca trail (if you can afford the ferry ride over here) but keep in mind that it will require lots of walking to complete in three days. My wife and I did it in 2.5 days at Easter (steady hiking from 9 a.m. to 6 p.m. in ideal conditions with an hour or so for lunch)

As an alternative, somewhere in Manning Park might do the trick. Something to also consider is whether you'd like to work from a "base camp" or pitch camp every night. Less time spect pitching camp means more time to explore. Have fun.

Stein would be a good one, especially becasue it is more free of snow that everywhere else right now BUT i'm pretty sure the ferry is a problem, I'd do research as the Fraser is having water level troubles even if the ferry isn't out and I got that wrong.

It seems even Garibaldi Lake has traces of snow, a coastal hike might make the most sense just due to low elevation.

Stein is great! It is an out-and-back, of course. A common 2 night trip is to camp at Earl's Cabin, dayhike to the suspension bridge or a bit farther on day two, then same camp and out. Devils camp is closer if it takes you too long to get to the trail head, a good dayhike destination from there is Cedar Grove.
The ferry will be out with the high water, you can still get there from Lillooet. Longish drive down the west side. Gravel road, a 2WD car is fine as long as you don't mind a few more rock chips in the paint. Narrow and VERY twisty in sections, plenty of blind corners so it takes longer than you would expect. Caution is warranted. Scenic as anything, really a lovely drive, just take it slow.

The Heather trail in Manning is a great beginner backpack trip for kids. You can hike into the first camp the evening before, then getting a decently early start you have the whole trail to yourselves. Drop the packs and scramble the first brother (with awesome 360 view), then continue to kicking horse where you will get first choice of camp sites. walk just out of camp to get killer stargazing at night. 2 of my top 5 shooting stars were viewed here. 13 km hike out next day. I am taking my son on his first 2 night trip here for his 5th b-day in couple weeks.( if open)
