Hello All--me and my roommate are new to hiking in Vancouver and so far we're loving it! The more trails we do, the more challenging we want them to be, but we've hit a wall. We've done a few trails in Lynn Valley Canyon and Quarry Rock, but we're looking for something a bit more challenging that takes approx. 2-3 hours. If any of you know of places within Vancouver that fit the bill--please let us know! Thanks so much.

You have come to the right place. May I suggest you check out the "Trails" tab (in the menu at the top of the page) and select Metro Vancouver... this will lead you to a list of trails in the area, including the name, completion time, elevation gain, length, average grade, and a link to directions and details for each one...

It really is an invaluable tool, and you will find many, many options from which to choose!

All the higher trails are still under snow right now, of course.
Until it melts I strongly suggest Diez Vistas at Buntzen. One of the best around, and it doesn't require snow equipment and experience. Expect 4-5 hours at a moderate pace, with a break or two.

Tunnel Bluff trail is snow free and transit accessible.
The Hat Hilton can be reached without snowshoes.

I'd second the Diaz Vistas and Tunnell Bluffs recommendations.

You said "lynn valley canyon", which to me suggests you haven't done Lynn Headwaters. If not, there are some nice mellow loops you can do there, plus I'd specifically recommend Norvan Falls and Lynn Peak for the type of hike you're looking for.

A little further afield, the Chief and High Falls Creek, both by Squamish.

Thanks so much, we will check some of those out! Do you know approximately when the snow-covered trails will be open?? I'm guessing not until mid-summer, is that correct?

Depends on what trails you're talking about :P

Before this past week, I would have said mid-August until the high alpine/summits were generally free of snow (there's probably a good 3m of snow up there). If the weather continues like this for a while longer though, we might luck out and be mostly snow free sometime in July.
