LEMON-RAISIN BREAKFAST BARS
2 cups raisins
14 ounces sweentened condensed milk
1 tablespoon lemon juice
1 tablespoon lemon rind
1 cup butter
11/2 cups brown sugar
11/2 teaspoons vanilla
1 cup flour
1/2 teaspoon baking soda
1/2 teaspoon salt
11/2 cups rolled oats
1 cup chopped walnuts or almonds


In a saucepan, combine raisins, milk, lemon juice and lemon rind. Heat and stir until bubbling, then remove from heat to cool slightly. In a bowl, beat together butter, brown sugar, and vanilla to make a batter. Stir in flour, baking soda and salt, then add oats and nuts. Press all but 2 cups of the batter into a greased 13 x 9-inch pan. Spread raisin mixture on top of the batter to within 1/2 inch of the edges. Sprinkle with dollops of reserved batter; press lightly.
Bake at 350 degrees F. for 25 to 30 minutes, or until golden brown. Allow to cool, then slice into 12 bars and package 2 bars per zipper-lock plastic bag. Yields 12 bars.

No trail is long with good company.

Sounds very good. I would add dried cranberries (craisins), and toasted hazlenuts instead of walnuts. I wonder if theres any way to cut down the amount of butter? Perhaps use half a cup of butter, and half a cup of applesauce. YUMMY

The lemon raisin breakfast bars are yummy. I am munching on one as we speak. Well, as I type to you. I used pecans for the nuts, since that's what I had on hand. And I used whole wheat flour because I didn't feel like opening the new bag of a.p. flour. Of course I couldn't wait until they cooled down, so they are still soft and chewy. Don't know if they'll crisp up or not, but at the moment....

Sorta the same topic, but do Clif bars come in variety packs? They're cheaper by the box but all the same flavour?

Here in the Seattle area Costco stores carry a variety pack of Clifs. The business outlet usually carries 2 different variety packs.
They also carry a Harvest Bar variety pack.
I've noticed at REI if you buy a dozen you get a discount that is comparable to Costco and they have a larger variety to chose from.

For an extra treat, save part of the mix and add in booze (Baileys, Kahlua, Choc/White Choc liquer) yummmmm.

Nomad, Jimbo gets a variety box of Clif bars at the Costco in Newton. In fact he just bought some last night. There are 4 different kinds and cost $16.00 for 12 bars.

After my friend "upgraded" my computer, I can't seem to find some things. Like this recipe. This time I printed it out, just in case. These tasted so good, I'm going to include them in my brunch tomorrow.
