| I heard you could store cheese in cheese cloth dipped in vinegar....Does any one know if it is just vinegar or water mix? Doing the bowron Aug 3 and want to make tacos...for the kids..Is there anyone out there with tips....Yvonne |

Good question, and I cannot help.
I'm sure it would depend at least somewhat on what kind of cheese. After all, a moist mild cheddar can start to walk after a week inside the fridge, while an aged cheese might last just as long on top of it. And while this is just guessing now, perhaps an advantage with something like a gouda with a low moisture count that is still in it's bacteria treated wax case.

| Take some smoked cheese, it lasts for a week or so with no refrigeration. |

| Buy a bag of babybels. Individually sealed in wax so they should be fine. I'm sure you could find some other cheeses that are sold pre-sealed in wax, from a decent Fromagerie |

I've had Babybells on a four day trip (with cool nights) and they were fine. The wax coatings made for great fire starter. |

| You can buy brie in a cardboard box (sealed in a plastic container inside) that doesn't need to be refrigerated until opening. Should be in the refrigerated (!) section of the grocery store. |

I did this on the Bowron Lakes in August 2008 and it worked just fine. Don't bother mixing the vinegar with water. Just dip it in vinegar, squeeze it out, and wrap the cheese. It kept the cheese from getting sweaty and yucky, and I lived to tell the tale. |

| baldersons 8 year old cheddar is at costco and tends to be a drier cheddar, I'd imagine it would travel better then the normal grocery cheddar. Its also delicious and a perfect match for tacos;) |

| Cheese in wax lasts a very long time. I often bring a handful of cheddar in wax, the small ones, about the size of a ping pong ball. |

I found Balderson Cheddar cheese in plastic snack sized packs at my local Quality Foods store. i've taken them on 4 day trips in warm weather and other than getting a bit oily they're fine.
Think about what cheese is... It's curdled milk, that's allowed to dry out a bit and then stored long enough for bacteria to give it flavor and sometimes it's allowed to mold a bit on purpose. It can't go bad because it already is.
