For water & windproof garments that can breathe almost as well as soft-shells, eVent seems to be the current gold standard. These pants represent one of the few options out there if you are looking for something relatively minimalist to keep weight and bulk down for backpacking. They are very comfortable and allow great range of movement thanks to their generous articulated cut in the crotch and knees.
The one significant drawback (but part of the reason for their light weight and low bulk) is the absence of side zippers. There is no way to put these on without removing your boots. However, given their comfort and the way that they breathe, if the weather looks like precipitation is a risk, you just put them on as your pants for the day's outing.
